Vegan Pancakes [GF+VG]

Ingredients:
1 ½cupsgluten-free oat flour(or ground oats)
1banana(mashed)
1cupmilk of choice
1tbspagave nectar (or honey)
1tspvanilla extract/ flavouring
1chia 'egg'(to make a Chia 'Egg' mix 1 tbsp chia seeds with 3 tbsp water. This makes 1 'egg'.)
1tspbaking powder

First make the chia egg in a bowl or cup and leave it set for several minutes. Add the remainder of the ingredients into a blender, pour chia egg last and blitz everything together.

Prepare a non-stick pan with a dab of coconut oil or coconut oil spray (We used the latter) and turn hob heat onto medium, which is approximately 4 (of 6) on ours.

Start by pouring a spoonful of batter with a tablespoon and cook for several minutes. Then, flip over gently using a spatula and let cook for another several minutes. Note: We had to use our fingers with these, mainly to make sure they wouldn't break when flipping over.

Repeat until all batter has been used. Then, drizzle your favourite sauce, fruit or even nut butter and enjoy these delicately moist and delicious pancakes!
