This is our most recent go-to pancake recipe because it makes THE FLUFFIEST pancakes! (Pinky promise). So, we thought of sharing recipe with you guys so you can experience the goodness too.

Ingredients:
1cupnon-fat greek yoghurt(I used Fage brand)
1cupgluten-free oat flour(or ground oats)
1scoop vanilla whey protein
½cupmilk of choice
4egg whites(4-5 depending on size of eggs)
1tspbaking powder
Method:

Mix all your ingredients in a bowl, in no particular order. However, we find it easier to add dry ingredients followed by wet.

Heat your non-stick pan on medium heat using low-cal spray or coconut oil. (Coconut oil works well with pancakes but also adds extra fat/calories so bear that in mind when using.)

Once pan is hot add heaped spoonful of batter, let it cook on one side then flip, flatten and let cook for a further couple of minutes. Repeat for all the pancake batter.

Recipe yielded 12 pancakes.
Notes
Note: These can be prepped beforehand, (we understand how sometimes it is quite hard to function in the morning). Just keep them sealed in a container in fridge and top / heat up just before eating.
