I chucked loads of ingredients in a bowl and hoped for the best, cue peanut pancakes. Made with peanut flour, oats, whey protein and egg whites - perfect for the peanut lovers.
Yields1 ServingPrep Time10 minsCook Time10 minsTotal Time20 mins
Ingredients:
6tbsppeanut powder(or peanut flour)
20gvanilla whey protein(or any flavour of preference)
2tbspxylitol(or preferred granulated sweetener)
30gready break porridge oatmeal
1tspbaking powder
3egg whites
3tbspmilk of choice
pinch of salt
Method:
1
Chuck it all in a bowl and mix until everything is combined.
2
Leave your mix to a side (let the oats and peanut powder soak in) and heat a non-stick pan to medium heat. Be patient and wait for it to properly heat up, don’t be tempted to increase heat because this is just going to burn your pancakes.Â
3
Then, using a low-cal spray oil, make your pancakes. Pour table-spoonfuls of mix onto pan – leave to cook several minutes and flip. Repeat for entire mix.
4
Stack them up and enjoy!
Notes
Top your pancakes with whatever your heart desires, keep it simple with some syrup or load it up with peanut butter or your favourites spreads or fruits.
