Like most great creations, they happen by mistake! After a failed blondie attempt turned into a bready texture, it prompted us to make these! Introducing rice flakes, (a new ingredient we have only just discovered) combined with rich chocolate casein, finished with a high protein/ high fiber frosting… At just 87 cals per piece while being low fat, moderate carbs and high in protein… the perfect treat for the health conscious and even the not so health conscious to enjoy over the Easter period. Even the Easter bunny will be tucking in…
Ingredients:
100g Delicious Alchemy Rice Flakes
1 Cup Unsweetened Almond Milk
1 Egg White
2 Scoops Bulkpowders Choc Casein
1 Tsp Xanthan Gum
1 Tsp Baking Powder
4 Drops Stevia (or similar alternative)
1 Tbsp Coconut Oil (melted)
2 Tbsp Butterscotch Chips (optional)
Frosting:
2 Tbsp Water
2 Scoop Vitafiber powder
1/2 scoop Bulkpowders Vanilla Whey
Directions:
Preheat oven to 170 Degrees C.
Add rice flakes to a bowl then add milk and heat via microwave OR heat milk in a saucepan and add to rice flakes. Do whichever you prefer and leave to set for 5 minutes (so rice flakes soak up the milk a little).
Proceed to fold in the rest of the ingredients except for coconut oil, leave that till last and combine until you get a sticky doughy texture.
Prepare a baking tray with greaseproof paper, then roll batter into balls and press onto lined tray.
Bake for 10-15 minutes until baked but soft to the touch.
Leave to cool completely before preparing frosting.
To make frosting, add water and vitafiber together in a microwave safe bowl and whisk softly so that both ingredients combine. Heat for 30 seconds, whisk again and heat for a further 30 seconds until powder is completely dissolved. Fold in whey until you got a sticky texture. Alternatively, you can also do this in a saucepan.
Note: The frosting needs to be thick enough to pipe, so if you find it is too runny, add more whey in tiny amounts until you reach desired consistency.
Add frosting mix into a disposable piping bag, cut off the tip to leave a tiny hole and (slowly and carefully) pipe your buns with crosses.
Leave to cool once again, or place in fridge so that the frosting set’s quicker.
Then cut up, lather it up with your favourite spread and enjoy!
We enjoyed ours with delicious low fat chocolate flavour cheese spread and it was absolutely delightful! (As you can see by the above picture) How will you have yours?
