Sweet Potato Pancakes [GF]

Using sweet potato powder, fresh spinach and cottage cheese - an easy way to get your daily veggies in without noticing. A win if you ask me.

Sweet Potato Patties Header

Ingredients:
 1 scoop sweet potato powder
 ½ scoop unflavoured whey
 2 eggs
 2 tbsp cottage cheese
 30 g grated mozarella
 handful fresh spinach (chopped)
 2 tbsp milk of choice
 1 tsp garlic powder
 1 tsp mixed herbs
 pinch of salt

In a measuring jug, mix all of your ingredients, ( I suggest a measuring jug just because a bowl might not be high enough for you to whisk up properly. But, you can use a bowl if you prefer. ) Mix it well till everything is blended together nicely.

Heat your oil at medium-high heat, hot enough, but not too hot, or your patties will burn. Once your oil is hot, with a teaspoon, begin scooping your mix onto the pan and pressing down with a fork. Then, start flipping and cooking as you would a pancake. However they will be a little more fragile and softer than pancakes so do be more delicate with them, especially when flipping over. I used a fork and spatula together to not mess them up!

Once browned and golden on both side, they are ready! Repeat until all the mix is done.

They were super yummy and reminded me of spinach patties my mum used to make me when i was little.
