Stuffed Sweet Potato Header

Sweet potato tends to be one of those things where we have to get really creative in order to enjoy it. Like, we would never eat a simple roasted sweet potato… (sorry sweet tater aficionados) its just not our thing! However, when we do get the concoctions right… the outcome = INCREDIBLE! Like this recipe… it may appear like a boring stuffed potato… but no… it was SO GOOD! It tasted just like pizza! Trust us and give it a go…

Ingredients:
2 Medium (pre-baked) Sweet Potato (approx 3 cup cooked)
2 Tbsp Garlic Tomato Puree
100g Grated Mozarella (Or Fresh if preferred)
100g Wafer Thin Cooked Ham (chopped)
50g Roughly Chopped Fresh Spinach Leaves
1 Tbsp Oregano
Sprinkle of salt

Directions:
Pre-heat oven to 170 Degrees C.

Slice your baked potatoes in half and set on a baking tray, flesh facing upwards.

With a spoon, remove the sweet potato flesh from all 4 halves and add to a bowl and mix in tomato puree, ham, spinach, salt and half of the mozarella and mash everything together. Then, spoon the mix back into the halves.

Sprinkle with remaining mozarella and top with a sprinkle of oregano.

Bake for approximately 20-30mins until the mozarella has crisped up.

Remove from oven and leave to cool for 10minutes or so before eating.

Add your favourite side salad and you’re good to go!

Perfect source of carbs to keep you fuelled,ย a decent amount of protein which can be customised by adding more ham, chicken or even tuna to bring it right up to suit your needs AND most importantly it tastes great. (Anything that resembles pizza flavour is great in our eyes).

Note: Keeps for a couple of days, so perfect for meal prepping in advance + you can adapt it to the fillings that you prefer too!
