Onion Rings… Fried up in grease and coated in a batter made of junk makes them a bad choice when looking after your health. Why do they have to taste so good, yet they be so bad?
BUT, that is to change, we’ve made a healthier version which is just as tasty, if not BETTER! Yipee!
Using steamed onions, ground almonds, garlic, herbs and then baked to perfection; a savoury side that everyone will enjoy. 100% guarantee.
Ingredients:
2 Onions (cut into rings)
150g Ground Almonds (approx 1 cup)
2 Egg Whites
1 Tbsp Pizza Seasoning (Mixed herbs with added garlic and pepper)
2 Tbsp Garlic Granules
Salt (as preferred)
Note: You will need a small sieve.
Directions:
Bring some water to the boil and leave it to simmer, this will be to steam the onions. Make sure the pan is not too full, so that it wont overflow when placing your onions over it.
Add onions to sieve and place onto simmering pan, leave onions to steam for approx 20 minutes. (They should go soft to the touch and floppy but still ‘al dente’). Remove from heat, throw out water and leave onions cooling in sieve.
Preheat oven to 180 Degrees C and prepare a baking tray with greaseproof baking paper.
Now for the messy part…
Add eggs to a bowl, then the rest of your dry ingredients onto a plate, ensuring they are mixed together well.
Then, in true momma Muscle Baker style (she would make our breaded chicken like this when we were young), get an onion ring, dip in egg, then in mix, coat and place on tray.
Repeat for all rings.
Bake for approx 30 mins, until rings become golden / crispy. Turn them round once half way through.
Remove from oven and leave to cool unless you enjoy burning your tongue like we stupidly did. (The excitement always gets the better of us.)
Perfect as a side dish, party snack or on its own. No doubt all the members of the household will love them… Even the kids and fussy eaters!
