It is a rare occasion when us folk here in little Gibraltar are graced with the presence of such 21st century items like the spiralised veggies (currently in every supermarket across UK). SOOOOO… when that happens, we buy it all in absolute excitement! Which is what happened today and culminated in making a late lunch using both the spiralised courgette and butternut. Easy, quick, super tasty, filling and great macros too match!
Ingredients:
1/2 Pack Morrisons Spiralised Courgette
1 Chicken Breast (Diced and fat removed)
1 Tbsp Sesame Oil
1/3 Cup Tamari Sauce
1 Tbsp Onion Flakes
1/4 Tsp Chilli Flakes
1/2 Tsp Course Sea Salt (or preferred salt)
Optional:
Baked Butternut Squash strands
Directions:
In a wok-style pan, heat oil on med-high heat then cook chicken until roughly cooked on all sides.
Add courgette, tamari, onion flakes, chilli, salt and cook on same heat for 5 minutes, turning constantly.
Lower heat and leave to cook for 10-15mins, stirring occasionally. The noodles will have become soft when done.
Note: Add a bit of ginger for a little bit of a kick! Most Teryaki style dishes contain ginger so it will resemble that type of flavour dish.
Pour into a bowl, top with baked butternut strands and enjoy!
This dish is extremely versatile, just add whichever ingredients and toppings you prefer OR make it Vegan-friendly by omitting chicken completely. The combo of sesame oil and tamari will bring any ingredients to life!

Why Tamari sauce?
The reason we use this instead of regular soy sauce is because this brand uses no extra sugar, in fact no sugar at all.
It has only 4 ingredients: Soy beans, salt, water and spirit vinegar. Thats it!
Most soy sauces are laden with sugar or glucose, which in small amounts is fine, (unless you are diabetic of course)…. but why pack it in to a savoury meal which does not need it? Would much rather save any sugar allowance for a piece of chocolate… don’t you agree? π
Plus, it actually is really high in protein! AND… the added bonus of it having no sugar, means less carbs = better macros. WIN.
