High Protein Oaty Bars


Fancied something a bit lighter to snack on that would pack some energy and protein, without using nut butters (for a change), that would pair perfectly with my coffee. That resulted in these delicious oaty bars, with added PB chips and a dark chocolate drizzle they really were the perfect combination. AND, the beauty of them is that they taste delicious on their own or you can adapt them to add whatever it is you most fancy! Be it nuts, chocolate chips, dried fruit or even oreos. Grab the recipe and go crazy….

1/2 Cup Water
4 Scoops Vitafiber Powder
2 Tbsp Maple Zero Syrup
2 Scoops Vanilla Whey
1 Scoop Vanilla Casein
1 cup Ground Oats
1 Tbsp Coconut Oil
3/4 Cup Granulated Stevia (or alternative)

Dark Chocolate drizzle

In a microwave safe bowl, add water and vitafiber powder then mix vigorously with whisk and microwave for 30 seconds. Whisk again and microwave for a further 30 seconds. You can also do this in a pan, simply heat up mix and whisk until powder fully dissolved.

Remove from microwave (or pan) and fold in zero syrup, whey protein, casein, oats and stevia. Leave whisk aside and mix together with a spoon as mixture will be difficult to work with if doing with a whisk. Fold in melted coconut oil and mix again, you should be left with a reasonably workable (but sticky) batter.

Note: Add preferred extras at this point, such as PB chips, nuts, or even something naughtier like chopped up oreos.

As best as possible (coat your hands in more ground oats if you need to) flatten mix onto a lined baking tray. We did a large rectangular shape, as this would make it easier to cut later on.

If you’d like the chocolate drizzle or even a full top coat of chocolate, add it now before refrigerating.

Store in fridge for up to an hour or stick in freezer for little bit less time if you are impatient.
