Sometimes you just need to start your Monday on a positive note ie. with a good pancake stack for breakfast as we did last week. *insert smug grin here* This is our most recent go-to pancake recipe because it makes THE FLUFFIEST pancakes! (Pinky promise). So, we thought of sharing recipe with you guys, so you too can start your Monday… or any other day of the week on a pancake high 😝
1 Cup Fage 0% Greek Yoghurt
1 Cup Ground Oats
1 Scoop Salted Caramel Quest Nutrition Whey*
1/2 Cup Unsweetened Almond Milk
4-5 Egg Whites
1 Tsp Baking Powder
*Can use any preferred whey protein, however concentrate works better than isolate whey.
Note: when making pancakes we recommend buying a good quality non-stick pan (or else you will end up with pancake scramble instead of a stack.)
Mix all your ingredients in a bowl, in no particular order. However, we find it easier to add dry ingredients followed by wet.
Heat your non-stick pan on medium heat. (Coconut oil works well with pancakes but also adds extra fat/calories so bear that in mind when using.)
Once pan is hot add heaped spoonful of batter, let it cook on one side then flip, flatten and let cook for a further couple of minutes. Repeat for all the pancake batter.
Yields 12 pancakes
We enjoyed ours with natural almond butter, Bulkpowders Zero Syrup and freeze-dried razzies! SO GOOD!
Note: These can be prepped beforehand, (we understand how sometimes it is quite hard to function in the morning). Just keep them sealed in a container in fridge and top / heat up just before eating.
