A super simple recipe made up of a few ingredients, including an often forgotten (yet awesome) flour: Peanut Flour. Easy to knock up when you’re on the go or don’t have much time but fancy something sweet OR if you’re just plain lazy!
Peanut flour is naturally Gluten & Wheat-Free, a lot lower in carbs than your standard flours and since most of the oil’s have been pressed out, peanut flour is relatively low in fat too! But, it still has all the protein, fiber, and other nutrients that make peanuts nutritional powerhouses.
Now, did someone say cookies?
Preheat oven to 170 degrees C. Line a baking tray with greaseproof baking paper (or use a silicone baking sheet instead.)
Mix all dry ingredients together in a bowl then fold in wet ingredients.
With a tablespoon, place spoonful’s of your mix onto tray, you can make them as large or little as you prefer.
Bake for approx. 20 minutes or until golden.
Recipe yielded 6 medium sized cookies.
