Banana and PB Quinoa Muffins

BANANA, PB & QUINOA MUFFINS



It’s been a tough couple of weeks with the passing of two very loved family members, the kitchen has hardly seen any action (unless opening and closing the fridge hoping for food to appear counts as an action) with Hungry Monkey firmly on speed dial.

Today was the only day where I had a full day to myself to recoup energy and decided to channel myself into a bit of baking therapy. I whipped out my bagful if Clearspring goodies and decided to make use of the quinoa flour to make some yummy muffins with mashed ripe bananas. It was a bit of a ‘chuck everything in a bowl’ type of creation but it worked beautifully and thought I’d share with you guys as I know you’d love it too:


Ingredients:
2 mashed bananas
1/2 Cup Maple Zero Syrup
2 Tbsp Agave
120g Clearspring Fruit Puree
1 Tsp Vanilla Extract
2 Tbsp Alpro Unsweetened Soy Yoghurt
1/2 Cup Soy Milk
250g Clearspring Quinoa Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Cider Vinegar
2 Tbsp Peanut Butter Co Mighty Maple

Method:
1. Pre-heat oven to 170-180 Degrees C.
2. Mash bananas in a bowl and fold in all wet ingredients except for cider vinegar and peanut butter.
3. Add dry ingredients until well combined then mix in cider vinegar.
4. Pour mix evenly into muffin tray (i used a silicone one for ease of use) and drop a bit of peanut butter ontop of each mix. With the end of a sharp knife swirl the peanut butter around.
5. Bake for approximately 15 minutes or until baked through (as different ovens may vary). You will know when they are done when you touch them and they are soft and a bit springy rather than mushy.
6. Leave to cool or burn your mouth while trying to eat one. Your call.

You can use any choice of plant or nut milks, substitute zero syrup for agave or honey, try oat flour/ ground oats instead of quinoa flour or even make your own fruit puree to use instead. Its a very easy recipe that you can adapt to suit and is perfectly low calorie, packed with natural sugars and carbs and deliciously tasting (meaning the kids will deffo approve it too).
